Scallop, Sweet Chilli and Lemon Grass Stir Fry
Serves/Quantity: Serves 4

Ingredients

  • 455g (1lb) Queen Scallops.
  • 300g (10.5oz) ready to cook fresh noodles.
  • 2 x 15ml spoon (2 tablespoons) olive oil.
  • 1 garlic clove, peeled and finely sliced.
  • 1 x 350g oriental stir fry vegetable pack.
  • 100g (3.5oz) mangetout, halved.
  • 1 x 300g jar sweet chilli and lemon grass stir fry sauce.
  • 2 spring onions, finely sliced lengthways.

Instructions

  1. Heat the olive oil in a large frying pan or wok. Add the garlic and scallops. Stir continuously for 3 minutes.
  2. Add the stir fry vegetables and mangetout. Stir.
  3. Drain the noodles and add to the pan. Stir thoroughly.
  4. Pour in the sauce and heat for 2-3 minutes until piping hot.
  5. 5 Serve immediately, garnished with the spring onions.
