Ingredients - 455g (1lb) Queen Scallops.
- 300g (10.5oz) ready to cook fresh noodles.
- 2 x 15ml spoon (2 tablespoons) olive oil.
- 1 garlic clove, peeled and finely sliced.
- 1 x 350g oriental stir fry vegetable pack.
- 100g (3.5oz) mangetout, halved.
- 1 x 300g jar sweet chilli and lemon grass stir fry sauce.
- 2 spring onions, finely sliced lengthways.

Instructions - Heat the olive oil in a large frying pan or wok. Add the garlic and scallops. Stir continuously for 3 minutes.
- Add the stir fry vegetables and mangetout. Stir.
- Drain the noodles and add to the pan. Stir thoroughly.
- Pour in the sauce and heat for 2-3 minutes until piping hot.
- 5 Serve immediately, garnished with the spring onions.
