Recipes: Welsh Rarebit with Smoked Mussels

WELSH RAREBIT WITH SMOKED MUSSELS
Serves 12 canapes
  • 8oz Mature Cheddar
  • 3 Egg Yolks
  • 2 tbsp Worcester Sauce
  • 12 Smoked Mussels
  • 2 splashes Tabasco
  • 3 slices Toast or Crostinis
  1. Blitz cheese, Worcester Sauce, Tabasco in a food processor, spread evenly on the toast, place on 4 Mussels, grill until golden brown
  2. Cut and Serve
