SEARED SCALLOPS ON WATERMELON CROUTON AND PAK CHOI
Serves 10 canapes
5 King Scallops (de Roed)
10 Seedless discs of Watermelon
4 Leaves of Pak Choi
1 tsp Poppy seeds
Season to taste
Season & sear King Scallops, cut out watermelon, blanch Pak Choi leaves and cut into thin strips.
To build: cut King Scallops horizontally in half, place on watermelon, wrap in Pak Choi, sprinkle with Poppy seeds
