Recipes: Seared Scallops on Watermelon Crouton and Pak Choi

SEARED SCALLOPS ON WATERMELON CROUTON AND PAK CHOI
Serves 10 canapes
  • 5 King Scallops (de Roed)
  • 10 Seedless discs of Watermelon
  • 4 Leaves of Pak Choi
  • 1 tsp Poppy seeds
  • Season to taste
  1. Season & sear King Scallops, cut out watermelon, blanch Pak Choi leaves and cut into thin strips.
  2. To build: cut King Scallops horizontally in half, place on watermelon, wrap in Pak Choi, sprinkle with Poppy seeds
