Ingredients MAIN DISH:-- 6oz (170gm) Whitby Cod Loin
- 1oz (28gm) Parma Ham
- 2 sprigs fresh Sage
- 3 Basil leaves
- 5 Cherry Tomatoes
- Olive Oil
- Salt & Pepper
FOR THE SAUCE:-- 2oz (56gm) Shallots, chopped
- 1 clove Garlic, chopped
- 1 tin crushed tomatoes
- 1 tsp Tomato Puree
- 2 Basil leaves
- 2oz (56gm) butter

Instructions - Salt & pepper the Cod.Lay the sage leaves on top, then wrap the Parma Ham around the Cod.
- Place on a baking tray with a drizzle of olive oil on top.Surround the Cod with the cherry tomatoes, place in a hot oven for 12-15 minutes.
- Sweat off the shallots and garlic in a little olive oil.
- Add the tin of chopped tomatoes with a little tomato puree and salt and pepper.Heat.
- When the sauce is cooked add a little butter and the basil.
- When this is ready pass it through a sieve onto a warm plate.
- Place the Cod in the middle of the plate and garnish with the cherry tomatoes and basil.
