Grilled fillet of Sea bass on Spinach with Queenie
Serves/Quantity: Serves One

Ingredients

  • 1 x 7oz (200gm) Sea bass fillet
  • 1lb (454gm) Spinach
  • 7 Queen Scallops
For the BUTTER:-
  • 1 small shallot, finely chopped
  • Half a garlic clove, crushed
  • 1oz (28gm) hazelnuts, chopped
  • 1 tbsp Corinader, chopped
  • Juice and zest of one lime
  • 2oz (56gm) Butter, softened
  • Salt & pepper

Instructions

  1. Combine all the above butter ingredients and roll up in foil into a sausage shape and refrigerate.
  2. Pan fry the Bass fillet skin side down first for two minutes. Turn and cook for a further 2-3 minutes until cooked.
  3. grill the Queenies with a cut round of hazelnut butter on top of each one.
  4. Finally wilt the spinach in a pan with a knob of butter and once cooked place in the middle of the plate.
  5. Arrange the Queenies around the spinach and place the Bass on top of the spinach.
