Ingredients - 8 King Scallop shells
- 40 unsoaked queen scallops
- 2 cloves of garlic, chopped
- 7oz (200gm) clarified butter
- half lemon (juiced)
- 4 tbsp breadcrumbs
- 9oz (250gm) grated Gruyere cheese
- 9oz (200gm) grated Cheddar cheese
- 4 sprigs of parsley, chopped
- 8 lemon wedges

Instructions - Heat oven to 180C and grill on full
- Place five scallops in each shell (not too close together)
- Mix the garlic, clarified butter and lemon juice, coat over the scallops and season
- Mix the cheese together and spread over the scallops
- Sprinkle with the breadcrumbs and bake in the oven for five minutes
- Finish under the grill until golden brown. Garnish with the lemon wedges and chopped parsley
