Grilled Scallops in Garlic Butter and Cheese
Serves/Quantity: Serves Four

Ingredients

  • 8 King Scallop shells
  • 40 unsoaked queen scallops
  • 2 cloves of garlic, chopped
  • 7oz (200gm) clarified butter
  • half lemon (juiced)
  • 4 tbsp breadcrumbs
  • 9oz (250gm) grated Gruyere cheese
  • 9oz (200gm) grated Cheddar cheese
  • 4 sprigs of parsley, chopped
  • 8 lemon wedges

Instructions

  1. Heat oven to 180C and grill on full
  2. Place five scallops in each shell (not too close together)
  3. Mix the garlic, clarified butter and lemon juice, coat over the scallops and season
  4. Mix the cheese together and spread over the scallops
  5. Sprinkle with the breadcrumbs and bake in the oven for five minutes
  6. Finish under the grill until golden brown. Garnish with the lemon wedges and chopped parsley
