Deep fried Squid with Garlic Mayonnaise
Serves/Quantity: Serves 1

Ingredients

  • 150g (6oz) Squid, cleaned and cut into rings
  • Half a Lemon
  • 2 tbsp Mayonnaise
  • 1 small Garlic Clove very finely chopped
  • Handful of Mixed Salad Leaves
  • 4 fl oz Milk
  • Seasoned Flour
  • 1 pint of Sunflower Oil for frying

Instructions

  1. Place the squid in the milk then into the flour and thoroughly coat.
  2. Mix the mayonnaise with the juice & zest of the lemon together with the garlic.
  3. Heat the sunflower oil in a wok. When hot, fry the squid very quickly for one minute, remove and drain.
  4. Arrange on the mixed leaves, serve with the mayonnaise and garnish with lemon.
