Recipes: Layered Lobster Salad

Layered Lobster Salad
Serves/Quantity: Serves 6

Ingredients

  • 2 cups (500 ml) lobster meat, cooked
  • 2 cups (500 ml) shredded lettuce
  • 1/4 cup (50 ml) green onion, finely chopped
  • 1 cup (250 ml) celery, thinly sliced
  • 1 cup (250 ml) carrot, coarsely grated
  • 1 cup (250 ml) frozen peas
  • 1/2 cup (125 ml) mozzarella cheese, grated
  • 2/3 cup (175 ml) natural yoghurt
  • 1/2 cup (125 ml) mayonnaise
  • 1 tablespoon (15 ml) lemon juice
  • 2 tablespoon (10 ml) honey
  • 1 tablespoon (15 ml) chives, finely chopped
  • 1/4 teaspoon (1 ml) dill
  • 2 tablespoons (30 ml) bacon bits
  • 1 small clove garlic, crushed
  • 1/4 cup (50 ml) Parmesan cheese

Instructions

  1. In a glass bowl, layer lettuce, onion, carrot, peas, lobster and cheese.
  2. Refrigerate for several hours.
  3. Combine remaining ingredients and serve with salad.

Additional Information

Succulent salad, easy on the eye and just as easy on the waist.
