I really enjoyed my demonstration, as I always do, and was delighted by the great response of the audience. I try to show just how simple this seafood cookery lark is and well basically if I can do it then there is no reason why you cant do it at home too.
I showcased a couple of raw dishes – scallop ceviche and tuna tartare, which was particularly gorgeous, and three cooked dishes – scallop with pea puree, halibut with salsa verdi and moules marinere. With some simple preparation I cooked all five dishes within 30 minutes and that includes time for me waffling on!
I am pretty sure all of these dishes went down well and there will be more of you cooking seafood this week because of it.
