MEET OUR SUPPLIER – Baxters of Morecambe

Potted Shrimps are often eaten around this time of year but they don’t need to be ‘just for Christmas’. Here at Ramus we source our potted shrimps from Baxters of Morecambe and always have them in store in both Ilkley & Harrogate – if not fresh then frozen which are equally good.

Not only is Baxters of Morecambe the oldest and most traditional potted shrimp company in the country, having been potting since the 1880s, but they are also Purveyors of Potted Shrimp to HM Queen Elizabeth, having achieved a Royal Warrant in 1967.  A family company for seven generations, Baxters was founded in 1799 by James Baxter. Its original slogan “If it’s a fish course, it’s Baxters of course” still resonates throughout the firm today.

How to Eat Potted Shrimps
Potted Shrimps are delicious served both hot and cold, often served warm on toast or with a salad and a slice of lemon. They take pride of place on our Ramus Emporium Platter alongside King prawns, Devon crab meat, peeled prawns and our famous roast salmon pâté but are equally delicious used as an ingredient. Baxters have a few suggestions:We’re also come up with our own recipe for a Potted Shrimp Risotto. A simple flavoursome risotto that’s made all the more delicious and savoury with the addition of the shrimps & butter. A perfect starter when entertaining or a tasty weekend lunch.

How to make your own Potted Shrimps
Potted Shrimps are incredibly convenient and easy to use when ready prepared but they are also straightforward to make at home, even if the peeling of the shrimps is a bit fiddly. Here are a couple of different versions for you to try:
